Carolina Oda

Carolina’s graduation in Gastronomy dates back to 2007 by the Águas de São
Pedro Senac campus. In the more than 10 years of her career, she breathes
the air of restaurants daily, acting for food and beverages to have the same
relevance in the gastronomic experience. She started as an assistant to
sommelière and brew master Cilene Saorin, continued as a room chief at
Melograno Bar, cared for the training of teams and brand development at
Tarantino Imports, did a 90-day gastronomic expedition over 9 countries in
Europe and worked as beer manager at Cia. Tradicional de Comércio (Ici
Brasserie). Her specialty is beer but, sip by sip, she has been learning about the
vast world of beverages, especially by hanging with some of the most reputed
specialists - including courses about distilled beverages, coffee, tea, sake and
cachaça. In 2016, she had the opportunity of sharing such knowledge in the “É
de Birra, mas não só” column in the Paladar section of the “OEstado de São
Paulo” newspaper. She conducts paired dinners with some of Brazil’s finest
chefs and restaurants, such as Jun Sakamoto, D.O.M. and Remanso do
Bosque. She teaches classes and performs consulting for implantation of
brands and businesses and beverage and hall service. Her dedication lies with
the hall teams, always working in order to value, capacitate and integrate
everything there is on both sides of the bar counter.
